Here is a cool project from Adafruit that shows you what it takes to build a pair of ears that react to your head movements. To complete these Circuit Playground Express Head-Tilt Ears, you are going to need 2 servos and a LiPo battery in addition to a Circuit Playground Express. You will also need a headband, felt or faux fur to cover the ears, flexible wires, and a few other things.
